Pound cake is one of the cakes that I love to make (and eat). 


With only eggs, butter, sugar, and flour (and a small amount of the baking powder) you can create a delicious cake. But sometimes, you may want to add something special to your cake, right? And today, my cake becomes special with lovely fragrance from Orange liqueur.
Actually, the reason comes from the fact that I love to collect liqueur, so I have to find a way to use it too, haha.
But only the Orange liqueur may not be enough, so the candied orange peel is added to make the cake more orange!!!
This time, the method of making pound cake is by beating the egg with the sugar until thick and fold in the flour before mixing the butter into the batter. The result we get from this method is the finer and lighter texture cake.
You may think that it's hard to beat the egg but it's not the same as making a sponge cake, so don't worry. Just beat it until thick as it will become flat after folding the flour anyway ^^.
For the liqueur, you can use other kinds of it too, rum or brandy is a great choice.

Orange liqueur Cake
Makes  18 x 7 cm. cake


Candied orange peels
30 g ..................... Candied orange peels
20 ml ................... Orange liqueur
Cake batter
140 g .................... Cake Flour
1 tsp ..................... Baking powder
2 .......................... Eggs
1 .......................... Egg yolk
............................ Pinch of salt
110 g ................... Granulated sugar
140 g ................... Melted unsalted butter
20 ml ................... Orange liqueur


Preheat an oven to 180℃
Line 18 x 7 cm. Pan with baking paper.

 Pour Orange liqueur pour into the Candied orange peels.
Heat in a microwave  (600W) for 30 seconds, let the mixture cool completely before using it.

 Sift the flour and baking powder together, set aside.

 Put the eggs, egg yolk and a pinch of salt into a bowl beat until foamy.
Add the sugar gradually, and beat at medium speed for 5 minutes, or until thick.

 Fold the flour mixture in 3 additions.


 Fold the melted butter in 2-3 additions.

 Until combined.

 Pour 1/3 of the batter into the prepared pan and spoon the candied orange peel over the batter.

 Pour half of the rest of the batter into the pan, and spoon the rest of the orange peel over the batter.

 Pour the rest of the batter into the pan.
Bake for 45-50 minutes.

 Remove from the oven and prick with a toothpick.

 Drizzle with 20 ml of Orange liqueur.

Let the cake cool completely.
