Peanut butter cookie, that's very easy to make.


And today, I made cookies again, haha. This time is a peanut butter cookie that's packed with a load of chocolate chunks. But you don't need butter for this recipe, so it's good when you don't have butter in the fridge. 
By using oil, all you have to do is mixing all the ingredients together in one bowl. As this recipe doesn't contain eggs, you can adapt the recipe in many ways. Replacing chocolate to dried fruit, or using nut milk, (or use vegan chocolate), you can make different versions of this cookie or turn it into a vegan cookie too.

Peanut Butter Chocolate chunk Cookies
Makes 7 pieces


30 g .......................... King Rice bran oil
40 g .......................... Granulated sugar
1/8 tsp ...................... Salt
30 g .......................... Peanut butter (super chunk)
2 1/2 tbsp ................. Milk
110 g ......................... Cake Flour
1/8 tsp ...................... Baking powder
50 g ..........................  Dark chocolate, chopped.




Preheat an oven to 180℃.
Line a baking sheet with baking paper.


I use King Rice bran oil.


Put rice bran oil, sugar, salt, peanut butter into a bowl, whisk to combine.
Pour milk into the bowl, whisk to combine.


Sift the flour and baking powder into the bowl.


Put chocolate pieces into the bowl.


Mix to combine.


Divide cookie dough into 7 pieces, and roll each piece into a ball.
Place on the prepared baking sheet, press the top with a fork.


Bake for 15 minutes.


Let it cool completely, and enjoy!
